Healthy Bacon and Tomato Tortilla Recipe

A Slimming World friendly healthy bacon and tomato tortilla recipe.

Prepare 400g of potato by peeling and grating. Wash the grated pieces and dry them in a kitchen towel.
Prepare 10 medium eggs by cracking in to a mixing bowl and seasoning with the mixed herbs and pepper. Use a hand whisk to beat the eggs a little.
Pre-heat your oven to 180c.
Spray a large oven proof frying pan with a little low calorie cooking spray.
Fry 400g of cooking bacon, cut in to thin strips, on a high heat until it has browned a little.
Add 400g of fresh chopped tomatoes and cook for a few more minutes until the tomatoes have broken down and the water has reduced down a little.
Add the potatoes to the bacon and tomato, and continue to cook until the liquid from the tomato has mostly boiled off and the potato is almost cooked. Mix the ingredients well to ensure the potato cooks evenly and does not catch on the bottom of the frying pan during this stage.
Add the beaten eggs to the ingredients in the pan and mix thoroughly, ensuring all pieces of potato absorb a little of the egg and the mixture begins to set a little.
Place the pan in the hot oven and bake for about 15 minutes until the egg has browned a little.
Remove the frying pan from the oven and allow to stand for a couple of minutes and sprinkle with a parsley.

Healthy Chicken Vindaloo Recipe

Make a curry paste by combining in a bowl 1 inch of root ginger and 2 tablespoons of red wine vinegar together with 1 teaspoon each of the spices, turmeric, coriander, cumin and garam masala.
Spray a large wok or frying pan with plenty of low calorie spray and place on a high heat.
Place 2 large finely sliced onions in the pan and fry for a couple of minutes until they are softened.
Add some chopped chili, 1, 2 or 3 according to how spicy you like it and 2 cloves of chopped garlic and continue to cook for another couple of minutes.
Add 400g of sliced chicken brest and again cook for an extra couple of minutes.
Add the curry paste and mix in well making sure all chicken pieces get a coating with the paste.
Add 1 tin of chopped tomatoes, mix well, turn down to a low simmer, and cook for about 30 minutes until the sauce has thickened down. Healthy Chicken Vindaloo Recipe should be a relatively thick sauce.
Serve with plenty of boiled rice.
