Healthy Chicken Vindaloo Recipe

  1. Make a curry paste by combining in a bowl 1 inch of root ginger and 2 tablespoons of red wine vinegar together with 1 teaspoon each of the spices, turmeric, coriander, cumin and garam masala.
  2. Spray a large wok or frying pan with plenty of low calorie spray and place on a high heat.
  3. Place 2 large finely sliced onions in the pan and fry for a couple of minutes until they are softened.
  4. Add some chopped chili, 1, 2 or 3 according to how spicy you like it and 2 cloves of chopped garlic and continue to cook for another couple of minutes.
  5. Add 400g of sliced chicken brest and again cook for an extra couple of minutes.
  6. Add the curry paste and mix in well making sure all chicken pieces get a coating with the paste.
  7. Add 1 tin of chopped tomatoes, mix well, turn down to a low simmer, and cook for about 30 minutes until the sauce has thickened down. Healthy Chicken Vindaloo Recipe should be a relatively thick sauce.
  8. Serve with plenty of boiled rice.
