Healthy Bacon and Tomato Tortilla Recipe

A Slimming World friendly healthy bacon and tomato tortilla recipe.

  1. Prepare 400g of potato by peeling and grating. Wash the grated pieces and dry them in a kitchen towel.
  2. Prepare 10 medium eggs by cracking in to a mixing bowl and seasoning with the mixed herbs and pepper. Use a hand whisk to beat the eggs a little.
  3. Pre-heat your oven to 180c.
  4. Spray a large oven proof frying pan with a little low calorie cooking spray.
  5. Fry 400g of cooking bacon, cut in to thin strips, on a high heat until it has browned a little.
  6. Add 400g of fresh chopped tomatoes and cook for a few more minutes until the tomatoes have broken down and the water has reduced down a little.
  7. Add the potatoes to the bacon and tomato, and continue to cook until the liquid from the tomato has mostly boiled off and the potato is almost cooked. Mix the ingredients well to ensure the potato cooks evenly and does not catch on the bottom of the frying pan during this stage.
  8. Add the beaten eggs to the ingredients in the pan and mix thoroughly, ensuring all pieces of potato absorb a little of the egg and the mixture begins to set a little.
  9. Place the pan in the hot oven and bake for about 15 minutes until the egg has browned a little.
  10. Remove the frying pan from the oven and allow to stand for a couple of minutes and sprinkle with a parsley.
